I just wrote a long response, and then it got deleted when I tried to post it, so I am trying again.
Here's the shorter version of what I wrote:
I didn't know anything about the shine of the melon or the "creamy" spot, but that was interesting.
According to my Mom, the thumping is everything, and her ability to pick them is really quite uncanny. (She has taught me a thousand times, and I am getting better, but I still make mistakes, usually by buying melons that are overripe rather than underripe.)
She doesn't use her knuckles; she sort of slaps the melon, and she listens to the pitch of the sound it makes, but also the type of vibrations it makes. Too high a pitch with shallower vibrations means underripe. You want a nice "deep" sound, but vibrations that are not too deep, because that means overripe (and buying overripe is a cardinal offense to Irene Black).
I can't tell you the number of times someone has asked me what I am doing in France when I thump melons! They must think I am so weird.
